Preparation of Salmon

    Marinate the Salmon

    In a shallow dish, combine olive oil, minced garlic, juice of half the lemon, salt, and black pepper. Place the salmon fillets in the marinade, turning to coat. Let marinate for at least 15 minutes.

    Preheat the Oven

    Preheat your oven to 400°F (200°C) while the salmon is marinating.

Cooking the Salmon

    Bake the Salmon

    Place the marinated salmon fillets on a baking sheet lined with parchment paper. Squeeze the remaining lemon juice over the fillets. Bake in the preheated oven for 12-15 minutes or until cooked through and flakes easily with a fork.

Preparing the Greens

    Sauté the Greens

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus and sauté for about 3-4 minutes until tender. Add the spinach and cherry tomatoes, and continue to sauté for another 2-3 minutes until the spinach is wilted and the tomatoes are slightly blistered.

    Drizzle the balsamic vinegar over the sautéed greens and toss to combine. Cook for another minute and remove from heat.

Serving

    Plate the Dish

    On each plate, serve a portion of the sautéed greens and top it with a piece of baked salmon. Optionally, garnish with lemon slices and additional black pepper.
