Mousse Preparation

Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

Separate the Eggs
While the chocolate mixture cools, separate the egg yolks from the egg whites. Place the egg yolks in a large mixing bowl and the egg whites in a separate clean bowl.

Mix Egg Yolks and Sugar
Add the granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is thick and pale.

Combine Chocolate and Egg Yolks
Slowly pour the melted chocolate mixture into the egg yolk mixture, stirring continuously until fully combined.

Whip Egg Whites
Using a hand mixer or stand mixer, beat the egg whites with a pinch of salt until stiff peaks form.

Fold Egg Whites into Chocolate Mixture
Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into individual serving dishes or glasses. Cover and refrigerate for at least 2 hours, or until set.

Prepare the Whipped Cream
In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with a mixer on medium-high speed until soft peaks form.

Top the Mousse
Once the mousse has set, remove from the refrigerator and spoon or pipe the whipped cream on top of each serving.
