Ingredients for Chocolate Lava Cake
Method
Directions for Chocolate Lava Cake
- 1
Prepare the Baking Dish
Preheat your oven to 425°F (220°C). Grease four ramekins (6 oz each) with butter and dust with flour to prevent sticking. Place the ramekins on a baking sheet for easy handling.
- 2
Melt the Chocolate and Butter
In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Heat over low heat, stirring constantly until both are melted and smooth. Once melted, remove from heat and let cool slightly.
- 3
Mix the Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale. This should take about 5 minutes.
- 4
Combine Mixtures
Slowly add the melted chocolate mixture to the egg mixture while continuously whisking to combine. Make sure the chocolate is not too hot to avoid cooking the eggs.
- 5
Add Remaining Ingredients
Stir in the vanilla extract, all-purpose flour, and a pinch of salt until just combined. Do not overmix.
- 6
Fill Ramekins
Evenly divide the batter among the prepared ramekins, filling each about 2/3 full.
- 7
Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. Be careful not to overbake.
- 8
Serve
Remove from the oven and let the cakes sit for 1 minute. Carefully run a knife around the edges of the ramekins, then invert onto dessert plates. Serve immediately with a scoop of vanilla ice cream on top.
