Apple Salad Directions

    Prepare the Ingredients

    Core and chop the apples into bite-sized pieces. Chop the celery into small pieces.

    Mix the Ingredients

    In a large bowl, combine the chopped apples, celery, walnuts, and raisins.

    Make the Dressing

    In a small bowl, mix together Greek yogurt, honey, lemon juice, and salt to taste.

    Combine and Serve

    Pour the dressing over the salad mixture and toss gently. Serve chilled.

Corn Chowder Directions

    Sauté the Base

    In a large pot, heat a bit of oil over medium heat. Add diced onion and minced garlic, and sauté until translucent.

    Add Corn and Potatoes

    Add the sweet corn and diced potatoes to the pot, stirring well.

    Add Broth and Simmer

    Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer until potatoes are tender.

    Blend and Finish the Chowder

    Use an immersion blender to blend the chowder until smooth, then stir in heavy cream, salt, and pepper to taste.

    Cook the Meat

    In a skillet over medium heat, cook the ground beef until fully browned. Drain excess fat.

    Add taco seasoning to the meat and mix well. Cook for an additional 2-3 minutes, allowing the spices to blend.

    Warm the corn tortillas in a separate skillet or microwave.

    On each tortilla, add a portion of the seasoned beef, shredded lettuce, diced tomatoes, and cheddar cheese. Top with sour cream.
