In a large mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, brown sugar, paprika, salt, black pepper, and apple cider vinegar. Mix well until all ingredients are fully integrated.

Place the Berkshire pork shoulder into a large resealable bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
