Prepare the Rice

    Rinse the Sushi Rice

    Begin by rinsing 1 cup of sushi rice under cold water until the water runs clear. This will help remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender.

    Fluff the Rice

    Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes. Then, fluff the rice with a fork and set aside to cool.

Prepare the Ahi Poke

    Dice the Ahi Tuna

    While the rice is cooling, dice 8 oz of ahi tuna into small, bite-sized cubes and place them in a mixing bowl.

    Mix in the Sauces

    Add 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, and a pinch of sea salt to the diced ahi tuna. Mix gently to combine.

    Add Aromatics

    Finely chop the green onions and add them to the bowl along with 1 teaspoon of black sesame seeds and red pepper flakes to taste. Stir to combine.

Assemble the Poke Bowl

    Prepare the Vegetables

    Slice the avocado and cucumber into thin strips. Thinly slice the radishes as well.

    Build the Bowl

    In a bowl, place a generous serving of the cooked sushi rice as the base. Top it with the ahi poke mixture and arrange the sliced avocado, cucumber, radishes, and 1 cup of edamame around the poke.

    Tear the nori sheets into strips and place them on top of the poke bowl for added flavor and texture.
