Prepare the Broth

    Combine Broth Ingredients

    In a large pot, add 4 cups of water, 2 chopped stalks of lemongrass, 5 torn kaffir lime leaves, 1 inch of sliced galangal, and 3 smashed Thai bird's eye chilies. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to medium-low and simmer for about 10 minutes to allow the flavors to infuse.

    Season the Broth

    Stir in 3 tablespoons of fish sauce, 1 teaspoon of sugar, and the juice of 3 tablespoons of lime juice. Taste and adjust the seasoning as needed.

Cook the Soup

    Add Main Ingredients

    Add 1 pound of peeled and deveined shrimp, 1 cup of sliced mushrooms, and 1 cup of quartered tomatoes to the broth. Increase the heat to medium and cook until the shrimp turn pink and the mushrooms are tender, about 3-5 minutes.

    Garnish and Serve

    Remove the pot from heat. Stir in 0.5 cup of chopped cilantro and 2 chopped stalks of green onions. Serve hot, garnishing with additional lime wedges if desired.
