Preparing the Chicken Skewers
Marinate the Chicken
In a bowl, combine the soy sauce, lime juice, brown sugar, minced garlic, grated ginger, vegetable oil, salt, and black pepper. Whisk until the sugar is dissolved. Cut the chicken breasts into bite-sized pieces and add to the marinade. Toss to coat well, cover, and refrigerate for at least 30 minutes.
Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
Grill the Skewers
Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Preparing the Peanut Sauce
Mix the Peanut Sauce
In a saucepan over low heat, combine the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, red chili flakes, and water. Stir continuously until smooth and heated through. If the sauce is too thick, add a little more water until desired consistency is reached.
Serve
Once the chicken skewers are cooked, remove them from the grill and serve hot with the peanut sauce drizzled over or as a dipping sauce on the side.
