Prepare Noodles

Soak the Noodles
Place the rice noodles in a large bowl and cover with hot water. Let them soak for about 15-20 minutes until softened. Drain and set aside.

Cook Protein
If using shrimp, peel and devein them. For chicken, slice into thin strips. For tofu, press and cube it. In a skillet over medium heat, cook the protein of choice until cooked through (about 3-5 minutes for shrimp, 5-7 minutes for chicken, and 7-10 minutes for tofu). Set aside.

Chop Vegetables
Finely chop the garlic, slice the carrots into thin matchsticks, and chop the green onions. Set all vegetables aside.
Make Sauce

Combine Sauce Ingredients
In a small bowl, mix together fish sauce, soy sauce, brown sugar, lime juice, and Sriracha. Stir until the sugar dissolves. Set aside.

In a large wok or skillet, heat 1 tbsp of oil over medium-high heat. Add garlic and cook for 30 seconds until fragrant. Add the cooked protein and stir-fry for another minute. Add the soaked noodles and sauce mixture. Toss everything together for about 2-3 minutes until noodles are heated through and well-coated with the sauce.

Add Vegetables
Add the bean sprouts and carrots to the wok. Toss and cook for an additional 1-2 minutes until vegetables are tender yet crisp.
Serve

Plate and Garnish
Serve the Pad Thai in bowls, garnished with crushed peanuts, lime wedges, and chopped cilantro. Enjoy!
