Prepare the Ingredients
If using chicken, cut it into bite-sized pieces. If using vegetables, chop them into similar sizes for even cooking. Mince the garlic and ginger.

Cook the Aromatics
In a large pot or skillet, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.

Add the Chicken or Vegetables
If using chicken, add it to the pot and cook until it is no longer pink, about 5-7 minutes. If using vegetables, add them and sauté for about 3-4 minutes until they start to soften.

Incorporate the Curry Paste
Stir in the green curry paste and cook for an additional 2 minutes to bloom the flavors.

Add Coconut Milk and Simmer
Pour in the coconut milk, and stir to combine. Bring the mixture to a gentle simmer. Cook for about 10 minutes, allowing the flavors to meld.

Season the Curry
Add fish sauce, brown sugar, and lime juice. Adjust seasoning to taste. If desired, add sliced jalapeño or Thai chili peppers for extra heat.

Finish with Fresh Basil
Tear the fresh basil leaves and stir them into the curry just before serving.

Serve the green curry over cooked rice or quinoa. Garnish with additional basil leaves if desired.
