Cooking the Base
- 1
Prepare the brown rice
In a medium saucepan, combine 1 cup of brown rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 10 minutes.
Preparing the Tofu
- 2
Press and cube the tofu
Press the firm tofu to remove excess moisture. Cut into bite-sized cubes.
- 3
Marinate the tofu
In a bowl, mix the soy sauce and cornstarch. Add the tofu cubes and gently toss to coat. Let it marinate for at least 15 minutes.
- 4
Fry the tofu
In a skillet, heat vegetable oil over medium-high heat. Add the marinated tofu cubes and cook until golden brown on all sides, about 10 minutes. Remove from heat and set aside.
Cooking the Vegetables
- 5
Making the Sauce
- 6
Prepare the sauce
In a small bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, minced garlic, and minced ginger until smooth.
Assembling the Bowl
- 7
Build your tofu bowl
In a bowl, layer the cooked brown rice, sautéed vegetables, and crispy tofu. Drizzle the peanut sauce over the top. Garnish with sesame seeds, sliced green onions, and diced avocado.
