Preparing the Base

    Cook the Rice or Quinoa

    Rinse 1 cup of brown rice or quinoa under cold water. In a saucepan, combine with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes (for rice) or 15 minutes (for quinoa) until fully cooked and water is absorbed.

    Prepare Mixed Greens

    Wash and dry 2 cups of mixed greens thoroughly. Set aside.

Preparing the Protein

    Prepare the Tofu

    Press 14 oz of firm tofu to remove excess moisture, then cut into cubes. In a non-stick skillet over medium heat, add 1 tbs of sesame oil. Cook the tofu cubes for about 10 minutes, turning occasionally, until golden brown.

    Optionally Add Other Proteins

    If desired, rinse and drain 1 cup of chickpeas and add them to the skillet with the tofu for the last 5 minutes of cooking. Alternatively, grill 8 oz of chicken breast until cooked through, about 6-7 minutes per side.

Making the Sauce

    Mix the Sauces

    In a small bowl, combine 2 tbs of soy sauce, 1 tbs of sesame oil, 1 tbs of sriracha, and 2 tbs of peanut sauce. Mix well and set aside for drizzling over the bowl.

Preparing the Toppings

    Chop the Vegetables

    Thinly slice 1 medium red onion and 1 medium cucumber. Grate or julienne 1 medium carrot. Set all the vegetables aside.

    Prepare the Edamame

    If using frozen edamame, cook according to package instructions, usually about 3-5 minutes in boiling water. Drain and set aside.

Assembling the Bowl

    Build Your Bowl

    In a large bowl, start with a base of either brown rice, quinoa, or mixed greens. Layer on your choice of protein (tofu, chickpeas, or grilled chicken) followed by the assorted toppings of onions, cucumber, edamame, and carrots. Drizzle with the prepared sauces and sprinkle with 2 tbs of sesame seeds.

    Garnish and Serve

    Optionally, add extra toppings or an additional scoop of protein according to your preference. Serve immediately and enjoy!
