Preparing the Spider Roll

Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, usually about 20-25 minutes. Once cooked, let it cool slightly and then mix with a little rice vinegar if desired.

Prepare the Soft Shell Crab
Prepare the tempura batter by mixing the tempura batter mix with ice water in a bowl until smooth. Heat vegetable oil in a deep frying pan over medium-high heat. Dip the soft shell crabs into the batter and carefully place them in the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Slice the Avocado
Cut the avocado in half, remove the pit, and slice it into thin strips.

Assemble the Roll
Lay a sheet of nori on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place soft shell crab, avocado slices, and shredded crab meat along the bottom edge of the rice. Roll the sushi tightly away from you, using the mat to help shape it, and seal the edge with a little water.

Cut the Roll
Using a sharp knife, cut the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to keep it clean.

Serve
Arrange the rolls on a serving platter. Drizzle eel sauce over the top and serve with soy sauce, wasabi, and pickled ginger on the side.
