Prepare Sushi Rice

Rinse the Rice
In a large bowl, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed sushi rice and 1.25 cups of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat and simmer for about 20 minutes until water is absorbed.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a separate small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold to combine. Allow the rice to cool to room temperature.
Prepare Spicy Tuna Filling

Dice the Tuna
Using a sharp knife, cut the sushi-grade tuna into small cubes.

Mix Spicy Tuna
In a mixing bowl, combine the diced tuna, mayonnaise, Sriracha sauce, and sesame oil. Stir until the tuna is evenly coated. Finely chop the green onions and fold them into the mixture.
Assemble the Rolls

Prepare Cucumber
Wash and cut the cucumber into thin strips.

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread Sushi Rice
Wet your hands to prevent sticking, take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top.

Add Fillings
Place a line of the spicy tuna filling and cucumber strips along the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to make a tight roll. Seal the edge with a little water.

Cut the Roll
Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
Serve

Plate the Rolls
Arrange the sliced rolls on a serving platter. Serve with soy sauce, pickled ginger, and wasabi on the side.
