Sushi Rice Preparation

    Rinse the Sushi Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

    Cook the Sushi Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and all water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Spicy Tuna Mixture Preparation

    Prepare the Tuna

    Using a sharp knife, finely dice the sushi-grade tuna into small cubes. Transfer to a mixing bowl.

    Make the Spicy Tuna Mixture

    Add mayonnaise, Sriracha sauce, chopped green onions, sesame oil, and salt to the diced tuna. Mix gently until well combined.

    Form the Nigiri

    Wet your hands with water to prevent sticking. Take a small handful of sushi rice and shape it into an oval or rectangular mound. The size should be about the size of a golf ball.

    Place a spoonful of the spicy tuna mixture on top of the shaped rice. Press gently to secure the tuna to the rice.
