Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker instructions or bring to a boil on the stove, then reduce to a simmer, cover, and cook for about 20 minutes until the water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
Preparing the Salmon

Slice the Salmon
Using a sharp knife, slice the fresh salmon fillet against the grain into thin pieces, about 1/4 inch thick.
Assembling Nigiri

Form the Rice
With wet hands, take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape, compacting it gently.

Top with Salmon
Place a slice of the salmon on top of the formed sushi rice, pressing down gently to adhere.

Add Wasabi
If desired, add a small dab of wasabi between the rice and the salmon slice.

Serve
Arrange the nigiri on a serving plate, and serve with soy sauce and pickled ginger on the side. Sprinkle sesame seeds on top if desired.
