Method

Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch. Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker instructions. Alternatively, boil water in a pot, add the rice, cover, and simmer for about 20 minutes until the water is absorbed.

    Season Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture while the rice is still warm. Let it cool to room temperature.

Prepare Fish and Vegetables

    Slice Fish

    Using a sharp knife, slice the tuna, salmon, and hamachi into thin strips, approximately 1/4 inch thick. Set aside.

    Prepare Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado into thin slices.

Assemble Rainbow Roll

    Lay Nori

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down, on the mat.

    Add Rice

    Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge. Press down gently to pack the rice.

    Add Fillings

    Arrange a line of ebi, tuna, salmon, hamachi, and avocado slices horizontally across the center of the rice.

    Roll Sushi

    Using the bamboo mat, carefully lift the edge closest to you and start rolling away from you, tucking in the fillings as you go. Roll tightly until you reach the edge of the nori. Moisten the edge of the nori with a little water to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 bite-sized pieces. Clean the knife with a damp cloth between cuts to ensure clean edges.

Serve

    Plate and Garnish

    Arrange the sliced rolls on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
