Musubi Recipe
Composed of a slice of grilled spam sandwiched on top of a block of rice and wrapped together with traditional nori.

Method
Prepare the Rice

Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear, which usually takes about 2-3 times.

Cook the Rice
In a medium saucepan, combine the rinsed rice with 2.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed.

Season the Rice
Once cooked, remove the rice from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula. Let the rice cool down to room temperature.
Prepare the Spam

Slice the Spam
Open the can of Spam and carefully slice it into 8 rectangular pieces, about 1/4 inch thick.

Cook the Spam
In a skillet, heat 1 tablespoon of oil over medium heat. Add the Spam slices and cook until they are golden brown and crispy on both sides, about 2-3 minutes per side. Once cooked, drizzle the soy sauce over the Spam and let it caramelize slightly, about 1 minute.
Assemble the Musubi

Shape the Rice
With wet hands, take a portion of the seasoned rice (about 1/2 cup) and shape it into a rectangular block, roughly the same size as the Spam slices.

Wrap the Musubi
Place the shaped rice block on a sheet of nori, then top it with a slice of Spam. Fold the nori over the rice and Spam, rolling it tightly. Use a little water to seal the edges of the nori.

Repeat
Repeat the process for the remaining rice and Spam slices. Optionally sprinkle sesame seeds on top of the musubi before serving.
