Prepare the Rice

Cook the Brown Rice
In a medium-sized pot, combine the brown rice and water. Bring to a boil over high heat.

Simmer the Rice
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 45 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.
Prepare the Salad

Chop the Vegetables
While the rice is cooking, wash and chop the romaine lettuce into bite-sized pieces. Halve the cherry tomatoes, dice the cucumber, slice the red onion thinly, and grate the carrots.

Mix the Salad
In a large salad bowl, combine the chopped lettuce, cherry tomatoes, cucumber, red onion, and carrots. Toss gently to ensure an even mix.
Prepare the Protein

Cook the Chicken
If using raw chicken, grill the chicken breasts over medium heat for about 6-7 minutes on each side or until fully cooked. Allow to rest for a few minutes before cutting into bite-sized pieces. If using pre-cooked chicken, simply scoop 5 portions into the salad.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper until well combined.
Assemble the Bowl

Layer the Ingredients
In a large serving bowl, layer half of the cooked brown rice and half of the salad mixture. Top with the grilled chicken (5 scoops).

Drizzle with Dressing
Drizzle the dressing over the top and add any optional toppings like feta cheese or avocado, if desired.
