Dough Preparation

    Mix the Dough

    In a large bowl, combine the all-purpose flour and salt. Gradually add hot water while stirring until a shaggy dough forms.

    Knead the Dough

    On a floured surface, knead the dough for about 5-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Make the Filling

    In a mixing bowl, combine the ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Assembly and Cooking

    Roll the Dough

    After resting, divide the dough into small pieces (about 1 inch each). Roll each piece into a thin circle about 3 inches in diameter.

    Fill the Gyoza

    Place about 1 tablespoon of filling in the center of each dough circle. Moisten the edges with water, fold the dough over to create a half-moon shape, and pinch to seal.

    Cook the Gyoza

    In a large skillet, heat the vegetable oil over medium heat. Place the gyoza in the skillet and cook until the bottoms are golden brown (about 2-3 minutes).

    Steam the Gyoza

    Carefully add 1 cup of water to the skillet, cover immediately, and let steam for about 5-7 minutes until the water evaporates and the gyoza are cooked through.

    Serve

    Remove the lid, let them cook for another minute to crisp the bottoms, then serve hot with soy sauce or your favorite dipping sauce.
