Filling Preparation

Mix the Filling
In a large mixing bowl, combine the ground pork, shredded carrot, shredded cabbage, chopped green onion, and minced garlic.

Season the Filling
Add soy sauce, sesame oil, salt, and pepper to the mixture. Mix well until all ingredients are evenly combined.

Cook the Filling
In a skillet over medium heat, cook the filling mixture for about 5-7 minutes, or until the pork is fully cooked and no longer pink. Stir occasionally.

Cool the Filling
Remove the skillet from heat and let the filling mixture cool slightly.
Rolling and Frying

Prepare the Wrapper
Take an egg roll wrapper and place it on a clean, flat surface with one corner facing you.

Add the Filling
Spoon about 2 tablespoons of the cooled filling onto the center of the wrapper.

Roll the Egg Roll
Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal the egg roll. Use a little water on the edges to help seal if necessary.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until hot. Test the oil by dropping a small piece of the wrapper in; it should sizzle.

Fry the Egg Rolls
Carefully place the egg rolls in the hot oil, a few at a time to avoid overcrowding. Fry for about 3-4 minutes or until golden brown, turning occasionally.

Serve
Serve the egg rolls hot with your favorite dipping sauce.
