Preparation of Base

    Cook the Brown Rice

    In a medium saucepan, combine 1 cup of brown rice and 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it stand, covered, for 10 minutes.

    Prepare the Edamame

    If using frozen shelled edamame, boil them in water for about 5 minutes until heated through. Drain and set aside.

    Chop the Vegetables

    While the rice and edamame are cooking, slice the cucumber, carrot, and red bell pepper into thin strips. Cut the avocado in half, remove the pit, and scoop out the flesh to slice it.

Preparation of Dressing

    Mix the Dressing

    In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of sesame oil, and 1 tablespoon of honey or maple syrup. Sprinkle in 1 teaspoon of sesame seeds and mix well.

    Assemble the Edamame Bowl

    In a large bowl, layer the cooked brown rice as the base. Top with the shelled edamame, sliced cucumber, carrot, red bell pepper, and avocado. Drizzle the dressing over the top and toss gently to combine.
