Method

Prepare Crab Mix

  1. 1

    Make the Crab Mixture

In a medium bowl, combine the imitation crab meat, mayonnaise, Sriracha, and chopped green onions. Mix well until fully combined and set aside.

Prepare Vegetables

  1. 2

    Prepare the Cucumber

Julienne the cucumber into thin strips and set aside.

Cook Sushi Rice

  1. 3

    Cook the Rice

Rinse 1.5 cups of sushi rice under cold water until the water runs clear. Cook according to the package instructions. Once cooked, let it cool slightly.

Assemble the Roll

  1. 4

    Lay Nori and Add Fillings

Place a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

  2. 5

    Add Crab Mix and Cucumber

Spread an even layer of the crab mixture (from the first section) along the bottom third of the rice-covered nori. Add a few strips of julienned cucumber on top of the crab mix.

  3. 6

    Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge of the nori with a little water.

Add Toppings

  1. 7

    Top with Eel and Avocado

Slice the grilled eel and avocado. Place the eel slices on top of the sushi roll, followed by the avocado slices.

  2. 8

    Drizzle with Eel Sauce

Generously drizzle eel sauce over the top of the roll for added flavor.

Serve

  1. 9

    Cut and Plate

Using a sharp knife, slice the roll into 6-8 pieces. Serve immediately with additional eel sauce on the side, if desired.
