Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This helps remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender. Remove from heat and let it sit, covered, for another 10 minutes.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a spatula. Allow the rice to cool to room temperature.

Prepare the Nori
Lay a sheet of nori on a bamboo sushi mat or a clean, flat surface, shiny side down.

Spread the Rice
Wet your hands to prevent sticking, then take about 1/2 cup of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge free of rice.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling it away from you, pressing gently but firmly to shape the roll. Continue rolling until the nori seals the sushi roll. Repeat with the second sheet of nori and remaining ingredients.

Slice the Rolls
Using a sharp, wet knife, slice the roll into bite-sized pieces. Wipe the knife clean between cuts to ensure clean edges.

Serve
Sprinkle sesame seeds on top and serve the avocado rolls with soy sauce for dipping.
