    Make Lavender Syrup

    In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Bring to a gentle simmer, stirring until the sugar completely dissolves. Add 2 tablespoons dried culinary lavender and simmer for 3-5 minutes to infuse. Remove from heat and let the mixture steep for about 15 minutes. Strain through a fine-mesh sieve to remove the lavender, and cool. You should end up with about 0.25 cup of lavender syrup.

    Brew Espresso

    Grind fresh coffee and pull two shots of espresso (about 1-2 ounces each). Set aside.

    Steam Milk

    Heat the milk until hot and just steaming, then froth to a creamy microfoam texture. Do not boil. Keep 1 cup ready for the latte.

    Assemble Latte

    In a large mug, add 0.25 cup lavender syrup. Pour in the two espresso shots, then top with steamed milk. Stir gently to combine. Optional: spoon a light foam on top and garnish with a pinch of dried lavender buds if desired.
