Rinse and drain the rice
Rinse the basmati rice under cold running water until the water runs clear. Drain well.

Sauté aromatics
In a medium pot, heat 1 tablespoon olive oil over medium heat. Add the chopped 0.5 cup onion and 2 minced garlic cloves; sauté until translucent and fragrant, about 3-4 minutes.

Add veggies and bloom spices
Stir in diced bell pepper, corn kernels, and frozen peas. Cook 3-4 minutes until vegetables are just tender. Sprinkle turmeric, cumin, smoked paprika, and chili powder over the vegetables; cook for 30 seconds to bloom the spices.

Toast rice with spices
Add rinsed rice to the pot and toast, stirring, for 2 minutes until the grains look glossy and coated with spices.

Add liquid and simmer
Pour in water or vegetable broth. Add salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and all liquid is absorbed.

Serve
Transfer to a serving dish. The turmeric gives a vibrant color and the veggies give a bright, Mexican-inspired side dish. Best served hot as a side to mains.
