Bloom and steep hibiscus
In a large pot, combine 2 cups dried hibiscus flowers with 8 cups water. Bring to a boil, then reduce heat and simmer for 10 minutes to extract color and flavor.

Sweeten
Turn off heat and whisk in 0.75 cups sugar until fully dissolved. If needed, heat briefly to dissolve completely.

Strain and chill
Strain the hibiscus infusion through a fine-mesh strainer into a clean pitcher. Let cool to room temperature, then refrigerate for at least 60 minutes.

Finish with lime
Stir in 2 tablespoons fresh lime juice. Taste and adjust sweetness or lime as desired.

Serve over ice
Fill glasses with ice and pour the hibiscus tea over the ice. Garnish with lime slices if desired.
