Rinse the rice under cold water until the water runs clear. If using almonds, rinse them as well.

In a large bowl or pot, combine the rinsed rice, almonds (if using), cinnamon sticks, and 6 cups water. Let soak for 3-4 hours, or overnight in the refrigerator to develop flavor.

Decide whether to drain the soaking liquid or keep it for a richer horchata. For a smoother drink, you may drain the solids and reserve a portion of the soaking liquid to blend.

Transfer the soaked mixture to a blender. If you kept the soaking liquid, add 2 cups fresh water to the blender. Blend on high until the mixture is very smooth and pale.

Pour the blended mixture through a fine-mesh sieve or nut milk bag into a large pitcher. Press gently to extract as much liquid as possible; discard the solids.

Stir in granulated sugar, vanilla extract, and salt. Taste and adjust sweetness as desired.

Chill the horchata in the refrigerator for at least 1-2 hours before serving.

Serve over ice if desired. Optionally dust with a pinch of ground cinnamon or garnish with a cinnamon stick.
