Prepare the Pulled Pork
In a slow cooker, combine pork shoulder, soy sauce, brown sugar, fish sauce, minced garlic, grated ginger, red chili flakes, and water. Cover and cook on low for 8 hours until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork shoulder from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix well with the sauce. Let it sit on warm while you prepare the slaw.

Make the Vietnamese-style Slaw
In a large bowl, combine shredded cabbage, grated carrots, sliced bell pepper, chopped cilantro, lime juice, and fish sauce. Toss to combine and let it marinate for at least 15 minutes.

Assemble the Sandwiches
On the bottom half of each toasted brioche bun, layer a generous amount of pulled pork followed by a spoonful of the Vietnamese-style slaw. Top with the other half of the bun and serve immediately.
