Roast the Meat
Place the roast in a roasting pan and cook for 20 minutes. Lower the oven temperature to 325°F (160°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove and let rest for 15-20 minutes before slicing.

Prepare and Roast the Carrots
Preheat the oven to 400°F (200°C). Peel and cut the carrots into sticks. Toss them with olive oil, honey, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
Creamy Horseradish

Mix the Sauce
In a bowl, mix together the prepared horseradish, sour cream, salt, and black pepper. Adjust seasoning to taste.
