Prepare Kabobs

    Marinate the Meat

    In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Add chicken or beef and marinate for at least 30 minutes.

    Prepare the Vegetables

    Chop the red and green bell peppers, onion, and mushrooms into bite-sized pieces. Set aside.

    Assemble Kabobs

    Thread the marinated meat and vegetables onto skewers, alternating between meat and vegetables.

Cook Kabobs

    Grill the Kabobs

    Preheat the grill to medium-high heat. Grill the kabobs for 10-15 minutes, turning occasionally, until the meat is cooked through.

Prepare Herb Roasted Potatoes

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Toss baby potatoes with olive oil, dried rosemary, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.

Prepare Seasonal Vegetables

    Sauté the Vegetables

    Slice zucchini and carrot. In a skillet, heat olive oil over medium heat, add the vegetables, and sauté for 5-7 minutes until tender. Season with salt and pepper.

Prepare Tzatziki Sauce

    In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, and salt until well combined. Refrigerate until ready to serve.
