Marinate the Chicken

In a large bowl, combine buttermilk with 1 tsp of salt and ½ tsp black pepper. Add the chicken thighs to the bowl, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Dredging Mixture

In a separate bowl, mix together the flour, cornstarch, remaining salt, black pepper, garlic powder, onion powder, and paprika.

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dredge the Chicken

Remove each chicken thigh from the buttermilk marinade, allowing excess liquid to drip off. Dredge each piece in the flour mixture, ensuring an even coating.

Fry the Chicken

Carefully place the coated chicken thighs into the hot oil, working in batches if necessary. Fry for about 7-9 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Remove the chicken from the oil and place on a plate lined with paper towels to drain excess oil. Let it rest for a few minutes before serving.
