Preparation and Cooking

Prepare the Chiles
Roast the New Mexico green chiles over an open flame until charred. Place in a plastic bag to steam for 10 minutes, then peel off the skins and slice open to remove seeds.

Stuff the Chiles
Fill each roasted chile with shredded cheddar cheese and close up the sides.

Make the Batter
In a bowl, mix together flour, cornstarch, baking powder, and salt. Gradually add water until a smooth batter forms.

Heat the Oil
In a large frying pan, heat vegetable oil over medium-high heat until hot.

Fry the Chiles
Dip each stuffed chile into the batter and carefully place in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Tater Tots
Peel and grate the potatoes, then soak in cold water for 30 minutes. Drain and pat dry. Shape into small tots and fry in hot oil until golden and crispy, about 3-5 minutes.

Serve
Plate the fried chile strips alongside the crispy tater tots. Serve with Tula’s famous sauces on the side.
