Sushi Preparation

    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to rice cooker instructions or bring to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Let the rice cool to room temperature.

    Prepare the Fillings

    Slice the fresh fish, cucumber, and avocado into thin strips.

    Assemble the Sushi

    Place a nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about an inch at the top edge. Lay the fish, cucumber, and avocado strips in a line across the middle of the rice. Using the mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

    Cut and Serve

    Using a sharp knife, slice the sushi roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
