Prepare the Rice
In a pot, bring 2 cups of water to a boil. Add the jasmine rice, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Cook the Chicken
In a large skillet, heat the sesame oil over medium-high heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes.

Add Aromatics
Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Add Vegetables
Add the sliced bell pepper and broccoli florets to the skillet. Stir-fry for about 3-5 minutes until the vegetables are tender-crisp.

Season the Dish
Pour in the soy sauce and lime juice, and add the chili paste. Stir well to combine and cook for another 2 minutes. Adjust seasoning with salt and pepper to taste.

Serve
Fluff the jasmine rice with a fork and serve topped with the chicken and vegetable mixture. Garnish with chopped green onions and cilantro.
