Preparation

Clean the Mussels
Rinse the PEI mussels under cold running water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.

Prepare Lemongrass
Trim the ends of the lemongrass stalks and remove the outer tough layers. Bruise the stalks with the back of a knife to release their flavor.

Prepare Jalapeno
Slice the jalapeno in half, removing the seeds for less heat if desired. Finely chop the jalapeno.

Chop Cilantro
Rinse the fresh cilantro under cold water and chop coarsely, setting aside for garnish.
Cooking

Cook the Aromatics
In a large pot over medium heat, add the bruised lemongrass, chopped jalapeno, water, salt, and black pepper. Bring to a simmer.

Add the Mussels
Once the broth is simmering, add the cleaned mussels to the pot. Cover and cook for about 5 minutes, or until the mussels begin to open.

Add Coconut Milk
After the mussels have opened, pour in the coconut milk, stir gently, and cook for an additional 2-3 minutes to heat through.
