Cooking the Pork Belly

Prepare the Pork Belly
Begin by seasoning the pork belly with salt and black pepper on all sides. Let it sit for about 30 minutes to absorb the flavors.

Fry the Pork Belly
In a heavy skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the pork belly and fry until crispy, about 5-7 minutes on each side. Once done, remove from oil and drain on paper towels.

Grill the Corn
Grill the corn on medium-high heat until charred, about 10-12 minutes, turning occasionally.

Prepare the Corn Topping
Once the corn is grilled, remove from the heat and let it cool slightly. Spread mayonnaise over the corn, then sprinkle with Cotija cheese, chili powder, and squeeze fresh lime juice over the top. Garnish with chopped cilantro.
Plating the Dish

Assemble the Plate
On a serving plate, place the crispy fried pork belly. Top with the over-easy egg. Serve the Mexican street corn on the side. Garnish with sliced chiles and extra cilantro.
