Cooking the Pork Belly

    Prepare the Pork Belly

    Begin by seasoning the pork belly with salt and black pepper on all sides. Let it sit for about 30 minutes to absorb the flavors.

    Fry the Pork Belly

    In a heavy skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the pork belly and fry until crispy, about 5-7 minutes on each side. Once done, remove from oil and drain on paper towels.

Making the Over-Easy Egg

    Cook the Eggs

    In a separate pan, melt the butter over medium heat. Crack the eggs into the pan and cook until the whites are set and the yolks are still runny, about 2-3 minutes. Carefully flip the eggs and cook for an additional 1 minute. Remove from heat.

Preparing the Mexican Street Corn

    Grill the Corn

    Grill the corn on medium-high heat until charred, about 10-12 minutes, turning occasionally.

    Once the corn is grilled, remove from the heat and let it cool slightly. Spread mayonnaise over the corn, then sprinkle with Cotija cheese, chili powder, and squeeze fresh lime juice over the top. Garnish with chopped cilantro.

    On a serving plate, place the crispy fried pork belly. Top with the over-easy egg. Serve the Mexican street corn on the side. Garnish with sliced chiles and extra cilantro.
