    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and let drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Prepare the Tater Tots

    While the bacon is cooking, preheat the oven according to the package instructions for the tater tots. Spread the frozen tater tots on a baking sheet and bake until golden and crispy, about 20-25 minutes. Halfway through, sprinkle with salt and black pepper.

    Prepare the Jalapeños

    While the tater tots are baking, slice the jalapeños into thin rings. If you prefer less heat, remove the seeds.

    Make Chipotle Sour Cream

    In a small bowl, mix the sour cream with chipotle powder. Adjust seasoning with salt if needed. Set aside.

    Cook the Eggs

    In the same skillet used for the bacon, crack the eggs and cook over medium heat until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.

Assembly

    Assemble the Cowboy Killer

    Once the tater tots are done, remove them from the oven and transfer them to a serving plate. Top with crumbled bacon, shredded white cheddar cheese, sliced jalapeños, and the over-easy eggs. Drizzle with chipotle sour cream.
