Blistered Shishito Peppers

Prepare the Peppers
Rinse the shishito peppers under cold water and pat them dry with a paper towel.

Heat the Pan
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

Blister the Peppers
Add the shishito peppers to the hot skillet. Cook for about 5-7 minutes, stirring occasionally until the peppers are blistered and slightly charred.

Season the Peppers
Sprinkle the sea salt and drizzle the lemon juice over the blistered peppers. Toss to combine and remove from heat.
Garlic Aioli

Prepare the Garlic
Peel the garlic cloves and mince them finely or use a garlic press.

Mix the Ingredients
In a medium bowl, combine 1 cup of mayonnaise, minced garlic, 1 tablespoon of lemon juice, and 2 tablespoons of olive oil.

Season the Aioli
Add 1 teaspoon of salt to the mixture. Whisk together until smooth and well-combined.

Chill
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
