Prepare Filling
Cut the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, salt, black pepper, and chopped chives to the yolks.

Mix Filling
Mash the yolk mixture with a fork until smooth and creamy. Adjust seasoning if necessary.

Fill the Egg Whites
Using a spoon or piping bag, fill the egg white halves with the yolk mixture.

Top Deviled Eggs
Sprinkle the crumbled bacon evenly over the filled deviled eggs.
Balsamic Reduction Preparation

Prepare Balsamic Reduction
In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat.

Reduce
Allow the mixture to simmer for about 15-20 minutes or until it reduces by half and thickens slightly. Keep an eye on it to prevent burning.

Cool and Serve
Remove from heat and let the balsamic reduction cool slightly before drizzling over the deviled eggs just before serving.
