Breakfast Burger

Herb Roasted Fingerling Potatoes

Method

Burger Preparation

  1. 1

    Cook the Sausage

In a skillet over medium heat, cook the bison & beef breakfast sausage until browned and cooked through, about 7-10 minutes. Remove from heat and set aside.

  2. 2

    Scramble the Eggs

In a bowl, whisk together the pasture-raised eggs with a pinch of salt and pepper. Pour into a non-stick skillet over medium heat and scramble until cooked to your liking.

  3. 3

    Assemble the Burgers

Slice the burger buns in half and toast them lightly. Layer the bottom half with sausage, scrambled eggs, a slice of smoked gouda cheese, sliced avocado, and sliced tomato. Top with the other half of the bun.

Herb Roasted Fingerling Potatoes Preparation

  1. 4

    Prepare the Potatoes

Preheat the oven to 425°F (220°C). Wash and halve the fingerling potatoes, then toss them in a bowl with olive oil, rosemary, thyme, salt, and pepper.

  2. 5

    Roast the Potatoes

Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.
