Prepare the Caramelized Onions

Heat olive oil in a skillet over medium heat. Slice the onion thinly and add to the skillet. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized. Set aside.

Make the Horseradish Aioli

In a small bowl, mix together the horseradish sauce and mayonnaise until well combined. Set aside.

Form the Meatloaf Patties

In a large bowl, combine the grass-fed beef, caramelized onions (reserve some for topping), salt, and black pepper. Mix gently until combined, then form into four equal patties.

Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired level of doneness. During the last minute of cooking, place a slice of smoked gouda on each patty to melt.

Prepare the Au Jus

In a small saucepan, heat the beef broth over medium heat until warm. This will be served as a dipping sauce.

Assemble the Sliders

On each burger bun, spread a tablespoon of horseradish aioli, place the meatloaf patty with melted gouda on top, and add the reserved caramelized onions. Top with the other half of the bun.

Serve

Serve the sliders warm with a side of au jus for dipping.
