Marinate the Chicken
In a bowl, combine soy sauce, gochujang, minced garlic, minced ginger, sesame oil, and honey. Add chicken thighs and marinate for at least 1 hour (or overnight for best results).

Kale Slaw Preparation

Make the Slaw
In a large bowl, combine chopped kale and shredded carrot. In a separate small bowl, whisk together apple cider vinegar, olive oil, salt, and pepper. Pour the dressing over the slaw and toss to combine.
Pickle Preparation

Prepare the Pickles
In a pot, combine rice vinegar, sugar, salt, and water. Bring to a boil until sugar dissolves. Pour over sliced cucumbers in a jar and let it cool. Refrigerate for at least 1 hour before serving.

Assemble the Sandwiches
Slice the grilled chicken and place it on the bottom half of the burger bun. Top with Korean BBQ sauce, kale slaw, and house-made pickles. Cover with the top half of the bun and serve.
