Prepare the Spaghetti Squash
Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle the inside with olive oil and sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for 40-50 minutes, or until tender.

Caramelize the Onions
While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat. Add the chopped onion and cook, stirring frequently, for about 15-20 minutes until caramelized. Add minced garlic for the last 2 minutes of cooking.

Mix the Casserole Ingredients
Once the squash is cool enough to handle, use a fork to scrape out the strands into a large bowl. Mix in the caramelized onions, DiNapoli tomato sauce, fresh mozzarella, and chopped basil. Season with salt and pepper to taste.

Assemble and Bake
Transfer the squash mixture into a greased baking dish. Top with grated Parmesan cheese. Bake in the oven for 25-30 minutes until the cheese is bubbly and golden.
