Preparing Chicken Tenders

Prep the Chicken
Preheat your oven to 400°F (200°C). Slice the chicken breasts into strips.

Breading Process
Set up a breading station: place flour in a shallow bowl, beat the eggs in a second bowl, and place panko breadcrumbs mixed with salt, pepper, garlic powder, and paprika in a third bowl.

Coat the Chicken
Dip each chicken strip first in flour, then in the egg, and finally coat with panko breadcrumbs. Place on a baking sheet lined with parchment paper.

Bake
Drizzle olive oil over the breaded chicken strips and bake in the preheated oven for 20-25 minutes, or until golden and crispy.

Roast the Carrots
Toss the sliced rainbow carrots with olive oil and salt. Spread them out on a baking sheet and roast in the oven for 15-20 minutes, or until tender.
