Prepare Ranchero Sauce

    Cook the Vegetables

    In a medium skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent. Add minced garlic and chopped jalapeño, cooking for an additional minute.

    Add Tomatoes and Season

    Stir in diced tomatoes and cook for about 5 minutes. Add salt, lime juice, and chopped cilantro. Simmer for 10 minutes, then remove from heat.

Prepare Beans

    Season Beans

    In a saucepan, combine cooked anasazi beans with cumin, garlic powder, and a pinch of salt. Heat over low, stirring occasionally, until warmed through.

Cook Eggs

    Fry the Eggs

    In a separate skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet, season with salt and pepper, and fry until the whites are set and the yolks are cooked to your liking.

Assemble Huevos Rancheros

    Layer the Components

    On each plate, place 2 corn tortillas. Top with a generous scoop of seasoned anasazi beans, followed by the fried eggs. Spoon ranchero sauce over the top and sprinkle with crumbled queso fresco and sliced avocado.
