Steak and Beans

Scrambled Eggs

Method

Cooking the Steak and Beans

  1. 1

    Grill the Steak

Preheat your grill to medium-high heat. Season the Cape Grim grass-fed steak with salt and black pepper. Grill the steak for about 4-6 minutes on each side, or until it reaches your desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

  2. 2

    Prepare the Beans

In a small saucepan, heat the cooked anasazi beans over medium heat until warmed through. Season with salt and black pepper to taste.

Making the Scrambled Eggs

  1. 3

    Scramble the Eggs

In a bowl, whisk together the Vital Farms eggs, salt, and black pepper. In a skillet, melt the butter over medium-low heat. Pour in the egg mixture and gently stir until the eggs are softly scrambled and slightly runny. Remove from heat.

Preparing the Salsa Verde

  1. 4

    Make the Salsa Verde

In a small bowl, combine the chopped scallions, cilantro, lime juice, and olive oil. Mix well and set aside.

Assembling the Burritos

  1. 5

    Assemble the Burritos

On each flour tortilla, layer slices of grilled steak, a portion of the warmed beans, scrambled eggs, a sprinkle of queso cheese, and a spoonful of charred scallion salsa verde. Roll up the tortillas tightly to enclose the filling.
