Prepare the Pizza Dough
Preheat your oven to 475°F (245°C) and roll out the pizza dough on a floured surface to your desired thickness.

Cook the Bison Sausage
In a skillet over medium heat, cook the bison sausage until browned and cooked through, about 5-7 minutes.

Char the Scallions
Place scallions on a grill or under a broiler until charred, about 2-3 minutes. Chop and set aside.

Assemble the Pizza
Spread the tomato sauce over the rolled-out pizza dough. Top with cooked bison sausage, charred scallions, mozzarella, cotija, and jalapeño slices.

Bake the Pizza
Drizzle olive oil over the toppings and bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

Add the Fried Eggs
Once the pizza is out of the oven, carefully place the fried eggs on top of the pizza. Slice and serve immediately.
