Prepare the Spaghetti Squash
Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper. Place cut side down on a baking sheet and roast for 30-40 minutes until tender. Once done, use a fork to scrape out the strands.

Prepare the Chicken
In a shallow bowl, beat the eggs. In another bowl, mix panko breadcrumbs, grated Parmesan, garlic powder, salt, and pepper. Dip each chicken breast in the eggs and then coat in the breadcrumb mixture.

Air-Fry the Chicken
Preheat your air fryer to 375°F (190°C). Place the coated chicken breasts in the air fryer basket and cook for 12-15 minutes until golden brown and cooked through, flipping halfway.

Add Toppings
Once the chicken is cooked, top each piece with a generous amount of DiNapoli organic tomato sauce and fresh mozzarella. Air fry for an additional 3-5 minutes until the cheese is melted and bubbly.

Serve
Serve the air-fried chicken on a plate with a generous serving of spaghetti squash on the side. Drizzle with extra tomato sauce if desired.
