Prepare the Trout
Preheat the oven to 375°F (190°C). Rinse the trout fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Coat the Trout
In a shallow dish, mix together the grated Parmesan cheese and bread crumbs (or crushed toasted almonds for the almondine version). Dip each trout fillet into the mixture, ensuring both sides are well-coated.

Bake the Trout
Place the coated trout fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the top of each fillet. Bake in the preheated oven for about 15-20 minutes, or until the trout is cooked through and the coating is golden brown.

Serve
Once the trout is done baking, serve it with the toasted rice and sautéed vegetables. Enjoy your Trout Parmesan or Almondine!
